A word derived from a synonym for a young, free spirit, full of creativity and imagination, and is home to the award-winning cuisine of Chefs Floriano Pellegrino and Isabella Potì. Fusing modern techniques and artful presentation, the pair have redefined dining expectations with their daring, provocatively rebellious, and bold-tasting dishes.
Far from the large, cosmopolitan cities further north, BROS’ sits in the historic, southern city of Lecce in Italy’s heel. Inspired by the region that surrounds them, the food culture at BROS’ unsurprisingly draws on a deep-rooted sense of place, melding tradition, forgotten products, and processes with the highly technical, creative, and contemporary skill set of its two internationally trained chef patrons. Together, they have created a cuisine style that appears at odds with its location, but one that excites both mind and palate, drawing guests into a world of aromatic intensity and masterful complexity of taste and flavour.
