Chef Spotlight: Petros Dimas Redefining Greek Cuisine at Makris Athens

We are thrilled to welcome Chef Petros Dimas of Makris Athens by Domes to Lotus Land’s restaurant clients. 

A chef deeply rooted in his country’s land and people, he grew up in the historic Athenian district of Thissio. His childhood was steeped in the tastes and traditions of Greece, with ingredients sourced directly from his family’s organic farm in Ancient Corinth.

When Petros returned to Greece in 2018, having worked in London and St. Moritz, he joined the Domes Resorts team to lead the launch of the refined-dining Makris restaurant at Domes Miramare on the island of Corfu. Two further islands, Crete and Milos, followed each blending hyper-local produce with Petros’ ethos of “ingredients first”.

In September 2023, Makris Athens opened just steps from the Ancient Agora. Here, Petros brings his vision to life, crafting menus inspired by Greece’s timeless culinary traditions where Greek gastronomy takes centre stage, offering guests an unforgettable journey through both tradition and innovation.

Josh Niland to Open New Restaurant at The Sundays, Hamilton Island’s New Boutique Hotel

Hamilton Island is delighted to announce a collaboration with Australia’s award-winning culinary duo, Josh and Julie Niland.

In their first Australian collaboration outside their three-hatted Sydney restaurant Saint Peter, the Nilands will bring their world-renowned flair to The Sundays, Hamilton Island’s new luxury boutique hotel, which is set to open in April 2025.

Overlooking Catseye Beach, The Sundays is a new 59-room hotel designed to redefine luxury and relaxation for familiesset against the stunning backdrop of the Great Barrier Reef. The Nilands will bring an entirely new dining experience to Hamilton Island, blending their culinary vision with a warm and family-friendly approach.

Inspired by his experience as a father of four and with his wife and business partner, Julie, Josh has crafted a series of menus to embrace the whole family, celebrating togetherness and the joy of sharing meals in a stunning ocean-front setting.

Da Terra, Bethnal Green reopens October 18th 2024

Chef Patron Rafael Cagali and General Manager Charlie Lee are delighted to announce the reopening of Da Terra, their two Michelin-starred restaurant located within the historic Town Hall Hotel in East London’s Bethnal Green, on Friday 18th October 2024.

Having undergone a complete four-week refurbishment, including behind-the-scenes upgrades and an extended open kitchen, the new room layout allows the pair to evolve their offering to a more personal and connected experience for their guests.

Charlie Lee says, “We’ve been open for almost six years, and it was time to reimagine our hospitality. Rafael and I have always wanted to elevate our guests' experience, so we have changed the layout, making a few tweaks to the flow and feel of the room.”   

 From a redesigned entrance, guests will be welcomed to the restaurant’s dedicated lounge to enjoy the first part of the Da Terra menu. A series of snacks will be served with pre-dinner drinks in preparation for the meal ahead, allowing everyone time to relax and unwind. The journey continues in the 28-seat main dining room with creatively refined dishes celebrating Rafael’s global upbringing and training while championing the finest produce.
