Josh Niland to Open New Restaurant at The Sundays, Hamilton Island’s New Boutique Hotel
Hamilton Island is delighted to announce a collaboration with Australia’s award-winning culinary duo, Josh and Julie Niland.
In their first Australian collaboration outside their three-hatted Sydney restaurant Saint Peter, the Nilands will bring their world-renowned flair to The Sundays, Hamilton Island’s new luxury boutique hotel, which is set to open in April 2025.
Overlooking Catseye Beach, The Sundays is a new 59-room hotel designed to redefine luxury and relaxation for familiesset against the stunning backdrop of the Great Barrier Reef. The Nilands will bring an entirely new dining experience to Hamilton Island, blending their culinary vision with a warm and family-friendly approach.
Inspired by his experience as a father of four and with his wife and business partner, Julie, Josh has crafted a series of menus to embrace the whole family, celebrating togetherness and the joy of sharing meals in a stunning ocean-front setting.
“Julie and I fell in love with the entire vision behind The Sundays” says Josh. “It reflects so much of what we value – bringing people together to create memories in beautiful surroundings. We can’t wait to introduce a dining experience that feels connected to the island and its incredible natural environment.”
The menu will feature Josh’s signature whole-fish ethos while also incorporating a selection of land-based proteins and local ingredients.
