A reminder of some of the central tenets of this exciting new chapter:
Osip aims to open up conversations beyond the restaurant’s dining room so that guests are immersed in its connection to the land, bringing a greater context to its menus.
Merlin is a farmer first and chef second, whose ethos aims to further elevate the importance of the field-to-plate concept embodied in his restaurant.
Proud to put the produce and artisans of Somerset on the gastronomic map, the team creates menus built on a network of hyper-local producers.
The surrounding community proudly lend their support by gifting surplus fruit, wild foraged ingredients and even land for growing (particularly, the two nearby farms and orchard where the majority of Osip’s ingredients are grown).
Biodynamic and seasonal availability determined by climate and not calendar are at the heart of Osip’s menus.
Wines from small-scale, sustainable growers join local spirits and traditional ciders like the annual Osip Cider, made with a blend of apples native to Somerset.
A rotating portfolio of artists will hold yearly residencies in the restaurant, including artworks installed as part of the permanent visual identity of Osip. This will be inaugurated with the works of Christoper Le Brun.
