Principe Forte dei Marmi reopens Dalmazia restaurant and announces a Lux Lucis summer beach pop-up
Boutique hotel Principe Forte dei Marmi in Tuscany is delighted to announce the reopening of its exclusive Dalmazia Beach Club and the reintroduction of its newly refurbished Dalmazia restaurant. Famed for providing an informal elegance with a rich culinary offering connected to the territory and exquisite sunset dining, the Dalmazia restaurant will also host for two nights a week – Friday and Saturday - a one of a kind pop-up with Michelin star restaurant Lux Lucis by chef Valentino Cassanelli, executive chef of both establishments.
The Dalmazia Restaurant (from Saturday 27th June 2020) Located minutes from the main hotel and with breath-taking views of the Tyrrhenian Sea and Apuan Alps, the Club’s acclaimed Dalmazia restaurant is open to everyone. The Dalmazia restaurant has undergone a significant refurb over the last few months. It reopens its doors from serving Tuscan breakfasts to serene lunches on the patio, sunset dining on to after-dinner drinks under the stars.
Dalmazia offers three spacious verandas, each of them with its unique design and individual facilities. The overall energy of the space matches the natural outline of the surroundings. Seating ranges from outdoors on the beach, in the shade of the pergola or comfortably inside. A firm favourite for relaxed cocktails is found in the aromatic Mediterranean garden. Each location, while slightly different in its offering, unites in an elegant, luxurious and welcoming energy.

Both Lux Lucis and Dalmazia restaurant come under the direction of chef Valentino Cassanelli. His cuisine directly connects to the location celebrating authentic flavours and ingredients, all thoughtfully considered with imagination and his non-traditional approach to cooking. His uncompromising support of local producers and growers allows Principe Forte dei Marmi to celebrate Tuscany and all her tastes and flavours.
Lux Lucis, The pop-up (from Friday 3rd July 2020) Over the last few quiet months, chef Cassanelli and his brigade have been working with respect to restrictions and direction, to evolve the 1 Michelin starred menu with new and exciting dishes to enjoy, Lux Lucis al Mare. While exploring their craft and searching for heightened flavours and new artisanal producers, the beach pop up idea arose. With the reopening of the Beach Club, the opportunity to use these immediate summer months to introduce some of those unique new dishes was too tempting.
The team created a menu specifically for enjoying at the beach and showcasing some new dishes all overlooking the sea. The Dalmazia restaurant was chosen to best enjoy the two nights a week of this one-off summer Lux Lucis al Mare elegant dining experience.
The sommelier team led by Maître Sommelier Sokol Ndreko worked hand in hand with the chefs. The resulting wine list accompanying both the Lux Lucis al Mare menu and the new Dalmazia restaurant menu for this season consists of 250 remarkable labels, chosen among small local producers, original and organic, next to a selection of more renowned labels.

The ‘Lux Lucis al Mare’ menu will comprise two options: 7 courses (€95) or 9 courses (€120). Wine pairing will be available (€35 or €50). The heart of the menu will place a strong emphasis on the sea, and all the dishes will celebrate Versilian flavours. Dishes like Blue Fish, basil, and infusion of toasted chickpeas; Maccheroncino with unripe tomato, calamari and sweet garlic; Red Mullet, bread and bazzone ham will tickle your taste buds.
