Tosca Restaurant

The newly relaunched fine-dining restaurant Tosca sits at the very heart of the ancient hilltop Castello di Casole, A Belmond Hotel, Tuscany near Siena. Flavours here are proudly Tuscan, and the prominence of hyper-seasonal local produce is pivotal to the entire menu. 

Executive Chef of Tosca Daniele Sera and Chef Michele Raggi have worked together for almost 17 years. Coupled with the finest produce from the ‘Orti del Castello’, the two vegetable gardens extending over one hectare of the 100% organic certified land, they have curated a series of recipes that have perpetually evolved with time, climate, and season while retaining the signature dishes so cherished by Tosca’s regular guests.

Dishes are created mainly on an average three-ingredient with even the humblest given prominence. House-made pasta and bread, estate-grown red wine, honey and olive oil and a revolving series of vegetables, fruits and herbs are augmented by locally sourced meat and exceptional seafood from producers who emulate the kitchen’s philosophy.
